Caribbean Big Game Spread: Festival Foods x Jerk Tavern
Ingredients
Honey Hot Pineapple Chicken Wings
- 2 lbs chicken wings , split and tips removed
- ⅙ cup Mike’s Hot Honey
- 1 tbsp green seasonings , optional but recommended
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp garlic powder
- t tsp onion powder
- 1 tsp paprika
Cornstarch Mix
- 1-2 cups cornstarch
- 1 tsp black pepper
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp paprika
Honey Hot Pineapple Sauce
- ½ cup Smucker’s Pineapple Preserves
- 3 tbsp Mike’s Hot Honey
- ½ tsp crushed red pepper flakes (optional)
Caribbean Pepper Steak Tacos
- 1½ lbs flank steak or sirloin
- 1 tbsp oil
- 1 tsp salt
- 1 tbsp jerk seasoning
- 1 tsp black pepper
- 1 medium onion , diced
- 1 green bell pepper , diced
- 1 red bell pepper , diced
- 1 yellow bell pepper , diced
- 8 flour tortillas
- 1½ lbs ground beef
Yogurt Pepper Jelly Sauce
- ½ cup yogurt ( any kind you have, Greek, whole, etc.)
- ¼ cup Reese pepper jelly ( or any brand you find.)
Jerk Beef Nachos
- 1½ Ibs 1½ lbs ground beef
- 1½ tbsp jerk seasoning
- ¼ cup green seasoning or 1 tsp all purpose
Ingredients for cheese sauce if going this route
- 2 tbsp butter
- 1½ cups milk (whole milk preferred)
- 1½ cups shredded cheddar cheese
- ½ tsp garlic powder
- ¼ tsp smoked paprika
- Salt , to taste
Toppings
- Jalapeños
- 1 cup black beans , drained and rinsed
- 1 cup Southwest-style corn , drained
- 1 large bag tortilla chips
- bell peppers
Instructions
Honey Hot Pineapple Chicken Wings
- Preheat oven to 425°F (or air fryer to 400°F).
- Pat wings dry and season with mikes hot honey, salt, pepper, all-purpose seasoning, garlic powder, and paprika. Marinate for 30 minutes or overnight for maximum flavors
- Also, season cornstarch with pepper, all-purpose seasoning, onion powder, garlic powder, and paprika. Toss wings in flour until fully coated.
- Fry: for 7-10 minutes or until fully cooked, then toss in the sauce. Optional but recommended pop in oven for 10-15 mins so the sauce can infuse.
- Bake for 40–45 minutes (or air fry 20–25 minutes), flipping halfway, until crispy.

- In a bowl, combine pineapple preserves, hot honey, hot pepper jelly, vinegar, and red pepper flakes. Simmer until smooth and glossy.
- Toss wings in sauce until fully coated.

Caribbean Pepper Steak Tacos
- Season the steak with jerk seasoning and black pepper.
- Heat oil in a large skillet over medium-high heat.
- Sear steak until browned and tender, then remove from the pan and rest, then slice.
Peppers
- Dice up, bell peppers all three colors, and onions.
Make Yogurt Pepper Jelly Sauce
- In a bowl, add yogurt and pepper jelly, and whisk until fully combined.
- Warm tortillas and fill with pepper steak and bell peppers, then drizzle with yogurt pepper jelly sauce. Serve immediately.
Jerk Beef Nachos
- Season with jerk seasoning, garlic powder, and onion powder (or green seasoning).
- Brown ground beef in a skillet over medium heat until cooked.
Black Bean Corn Mix
- To a bowl, add black beans and corn Optional: diced bell peppers ( all colors), ¼ cup onions, finely chopped.
- Top with beef mixture and shredded cheese.
- Spread tortilla chips on a baking sheet.
- Bake 10–12 minutes until cheese is melted and bubbly.
- Add toppings and serve immediately.
Creamy Game-Day Cheese Sauce
- Melt butter in a saucepan over medium heat.
- Slowly whisk in milk until smooth.
- Reduce heat to low and stir in shredded cheese until fully melted.
- Season with onion powder, garlic powder, smoked paprika, and salt. Let it bubble for 5 mins or until the desired consistency.
- You can do self-serve tortilla chips, jerk beef, cheese sauce, and toppings
- Serve warm and drizzle generously over nachos.
