Escovitch is a traditional Jamaican pickle sauce that is enjoyed all over the island. Jamaican Escovitch Pickle Sauce is also known as Hot Pepper Pickle, sweet, spicy, and tangy sauce with vegetables and herbs and a secret family ingredient that will take it to the next level! It’s normally served over fried fish.

Jamaican Escovitch Sauce is a mixture composed of carrots, pimento berries, onions, bell peppers, sugar, scotch bonnet pepper, spices, vinegar, and here is the secret orange juice!!!! Yes, the orange juice gives it a nice acidic balance yet sweet but not too sweet if you know what I mean lol.
Which country does escovitch fish come from?
The Spanish Jews, the first European arrivals to the island, contributed dishes such as the vinegary escovitch fish (Spanish escabeche) contributed. Escovitch Fish is traditionally a Jamaican dish that is enjoyed all over the island. The style of cooking originated in Europe/Mediterranean where it is known as Escabeche and was brought to Jamaica by the Spaniards.
How do you eat escovitch fish?
Escovitch fish goes well with festival, hard-dough bread, mashed potatoes, rice and peas, and fried plantains. You are free to choose whatever side you like.
Is Escovitch Sauce served cold?
It can be enjoyed hot or cold. This wonderful Escovitch Fish Sauce can be made on stove top boiled or it can be made I made and placed in a mason jar placed in the fridge to set.
Ingredients in the Jamaican Escovitch Pickle
- White Vinegar: adds that acidic tart flavor to the pickled vegetables and also preserved them for a very long time
- Scotch Bonnet Pepper: Adds a lot of spice because the seeds are included but use the amount that you can handle. If you can’t find Scotch Bonnet Pepper then the Habanero Pepper can be used as a tremendous alternative.
- Orange Juice: Adds a sweet acidic flavor to the pickle sauce.
- White Onion or Purple Onions: Adds that sweet, aromatic flavor to the sauce. After sitting in the vinegar mixture for a few days the flavors are enhanced
- Carrots: adds some sweetness ss and crispness with some added color to the sauce.
- Pimento Seeds: Adds aroma and is tasty. Pimento seeds are used in almost every Jamaican dish when seasoning.
- Spices: Complete Seasoning, Black Pepper.
How to store Jamaican Escovitch Pickle Sauce
The way we store our escovitch pickle in the refrigerator. But, you can store it right on the kitchen counter also.
How to make Jamaican Escovitch Pickle Sauce
- Chop up all your vegetables
- To a medium saucepan, add white vinegar and water, let that boil come to a bubble then add in your carrots and boil for 5 mins.
- Then add salt, granulated sugar, pimento berries, bell peppers (red, yellow, and green), orange juice, onion, and seasoning.
- Boil for 5 more mins the vegetables don’t over boil we like the vegetables crunchy.
- Add the vegetables to a mason jar then pour the vinegar into it. Cool then place the lid on the Mason Jar.

I pray we are not overtaken as a thief in the night, but we all are ready, and patiently waiting for His return. Watching out for Him, discerning the signs and the times we are in. Not living here on bread alone, but by all the words that proceed out of the mouth of God.
For He is faithful, His mercy endures forever, and His truth endures for all generations. Jesus is the Way, Jesus is the Truth, and Jesus is the Life. No one can make it to Our Heavenly Father unless you come through Him. I pray we all do, in Jesus’ Holy, Heavenly and Precious name. Amen.
How to make Jamaican Escovitch Pickled Sauce
Ingredients
- 1 medium Carrot washed, peeled
- * 1 small White Onion wash and sliced into rings
- * 1/3 of each color Bell Peppers red, green & yellow, washed and
- * 2 Scotch Bonnet Peppers or Habanero Peppers washed and sliced with seeds
- * 1 Tablespoon Pimento Seeds
- * 1 Teaspoon Salt
- * 1/4 cup of Orange Juice
- * 3 to 4 Tablespoons of Granulated Sugar
- * 1 1/4 cups of White Vinegar
- * 1 tsp of Complete Seasoning
- * 1 tsp of Black Pepper
- * 2-3 cups of Water
