12 Best Caribbean Fish Recipes: Flaky, Flavorful Dinners for Cool Fall Nights
Blessings, family! The evenings are finally cooling down, the sun is setting a little earlier, and our kitchen has been leaning on fish all month long. It comes together fast on a busy weeknight, it takes seasoning beautifully, and it eats light enough for the nights when a heavy pot of stew feels like too much.
There is something holy about fish and fire. After the Most High raised Yahshua, the disciples came in from a long night out on the water and found breakfast already waiting on the shore: “As soon then as they were come to land, they saw a fire of coals there, and fish laid thereon, and bread.” (John 21:9, KJV). He fed them before He asked them a single thing. That is the spirit we cook in around here — food set down in love, and YAH providing before we even know to ask.
So we pulled together twelve of our own fish recipes — escovitch, brown stew, steamed, curried, fried and folded into tacos — every single one cooked, photographed and eaten right here in our Florida kitchen. Grab a whole snapper or a couple of fillets, and let us get into it.
Escovitch and Fried Fish Favorites
1. Jamaican Escovitch Fish

Crispy fried snapper crowned with that bright, peppery vinegar escovitch sauce and a tangle of carrot, onion and scotch bonnet — the plate every Jamaican Friday is built around.
2. Jamaican Escovitch Sliced Fish (King Fish)

Thick king fish steaks fried until the edges go golden, then drowned in escovitch pickle so every bite carries heat, sweetness and vinegar at once.
3. Escovitch Salmon Bites

All the escovitch flavor you love in quick, poppable salmon bites — weeknight fast, and the kind of thing that disappears before it reaches the table.
4. Jerk Fish and Chips

Our Caribbean answer to the chippy: jerk-seasoned fish fried crisp and served with thick-cut fries for a cozy, hands-on dinner.

5. Jamaican Brown Stew Fish

Fried fish simmered down in a rich, savory brown gravy with peppers and onions until the sauce clings to every piece — pure comfort as the evenings turn cool.
6. Jamaican Steamed Fish

Whole fish steamed gently with okra, carrots and butter crackers in a light, peppery broth — clean, nourishing, and the way Grandma made it.
7. Jamaican Coconut Curry Snapper

Snapper bathed in a golden coconut curry that is creamy, fragrant and begging for a plate of white rice underneath it.
8. Jerk Blackened Salmon

A hard sear, a bold jerk crust and a tender pink center — this one takes about twenty minutes and still eats like a restaurant plate.
Ackee, Saltfish and Easy Fish Handhelds
9. Authentic Jamaican Ackee and Saltfish

Our national dish done right — buttery ackee folded with flaked saltfish, peppers and onions, and just as good at dinner as it is at sunrise.
10. Jamaican Salt Fish Fritters

Crispy on the outside, soft and savory inside — these fritters are the snack that never makes it off the counter in one piece.
11. Jamaican Seasoned Rice with Ackee and Saltfish

A full one-pot meal: seasoned rice cooked through with ackee and saltfish so every grain carries the flavor.
12. Snapper Fish Tacos

Seasoned snapper tucked into warm tortillas with a fresh, crunchy slaw — a light, quick dinner the whole family builds themselves.
Whatever you pull out of the freezer this week, season it well, fry it hot, and share it with somebody you love. That is the whole secret.
A Word of Wisdom
The eyes of all wait upon thee; and thou givest them their meat in due season. Thou openest thine hand, and satisfiest the desire of every living thing.
