We decided to use the porgy fish seasoned with salt, black pepper, all-purpose seasoning, pepper flakes, garlic powder, dried oregano, and complete seasoning; wrapped in aluminum foil then baked until cooked.

Jamaican Steamed Fish
Ingredients
- 1/4 cup of Butter
Ingredients to season fish
- 2 Porgy or Fish of your choice
- 1 tbsp of black pepper
- 1 tsp of pepper flakes
- 1 tsp of adobo
- 1 tsp of complete seasoning
- 1 tsp of garlic powder
- 1 tsp of onion powder
- 1 tsp of dried oregano
Ingredients for Cabbage Stuffing
- 2 cups of cabbage
- 1 cup of fresh or frozen okra
- 1 cup of mixed veg
- 1/2 scotch bonnet pepper
- 1 tbsp of complete seasoning
- 1 tbsp of black pepper
- 1 tsp of adobo
- 1 tsp of onion powder
Instructions
- Wash fish in vinegar and lime and soak for at least 10 minutes
- While the fish soaks mix dry fish seasoning in a bowl
- Drain fish and slice on both sides in the opposite direction
- season fish with mixed dry seasoning
- Cut up cabbage and okra, combine in a bowl with mixed veg and season well, add scotch bonnet pepper to taste
- Preheat oven to 450 degrees
- Rip foil sheets and smear butter on the sheet then Place fish on the buttered sheet and spoon 1 spoon of butter inside fish
- Add cabbage mixture inside and outside of fish
- Wrap fish up tight in foil; Repeat for every fish.
- Place fish in the oven for 35-45 minutes
