Easily The Best Jerk Shrimp Quesadilla Recipe Ever
Shrimp Quesadilla! Our version combines a delightful mixture of spicy jerk shrimp cooked in butter, finely minced tomatoes, spring sautéed onions, garlic, crunchy corn tortillas with a spicy sour cream and melty Monterey Jack and Cheddar cheese, just to name a few. But, you could also use chicken or beef or even go meatless and add grilled vegetables like zucchini or drained black beans. If we had to choose one type of cuisine to eat for the rest of my life other than Jamaican food it would most definitely have to be Mexican food.
What is a quesadilla?
A quesadilla is a Mexican dish consisting of a tortilla that is filled primarily with cheese, and sometimes meats, spices, and other fillings, and then cooked on a griddle or stove. Traditionally, a corn tortilla is used, but it can also be made with a flour tortilla. And quesadillas, who doesn’t want to love on them quesadillas are such perfect quick meal!
Ingredients You’ll Need
- Shrimp– they’re simply delicious in quesadillas with the fatty cheese it’s a good balance.But feel free to use any meat or veg of choice if your vegan
- Ground Seasonings– used to season the filling.
- Yellow onion – Red onion can be substituted.
- Scotch Bonnet Pepper– Optional
- Scallions– Brings flavor to the shrimp
- Garlic – use fresh garlic for the best flavor.
- Cheddar and Monterey jack cheese – We like this blend for quesadillas. Shredded Mexican cheese will work fine too.
- Tomato– gives it a fresh element
- Chopped Vegetables– Mixed Greens ( veg of your choice)
- Butter – this is used to saute the jerk shrimp.
- Flour tortillas – use the large burrito size tortillas, they’ll be able to fit a lot more filling and cheese than the taco size tortillas.
- Corn tostadas– To add crunch to your quesadilla. (optional)
- Sour cream and Hot Sauce Combo- Goes amazing as a dip for your quesadilla.
Tips to make the perfect Quesadilla Every time!
- Always cook your quesadillas fresh so it won’t get soggy and the cheese won’t get hard. But if this happens warm in the oven or toaster oven.
- Cook it on medium heat because you don’t want a burnt quesadilla. Cooking it a minute and a half on each side will not only give you a nice golden and crispy crust but will also melt your cheese to that nice ooey gooeyness.
- Use flour tortillas to hold your cheese in. Don’t go easy on the cheese, because not only will it be delicious but the cheese acts as a binding agent to keep the filling in place keeping both sides of the tortilla together.
- Do not overstuff the quesadilla it’s best to keep it on the lighter side. Too little and the filling will fall out and too much and the filling won’t be even.
- If you use too much oil you will end up with soggy tortillas. Also, use canola oil or vegetable to coat your pot. The Olive oil flavor can be a bit overpowering. Oil is pure fat, so it browns tortillas impeccably, resulting in pleasantly crispy spots on the outside of your quesadilla.
How to make Shrimp Quesadilla ?
- Step 1
Toss the shrimp in a small bowl with jerk seasoning, complete seasoning, and black pepper.
- Step 2
Chop up seasons like garlic, onion, scallions, and Scotch bonnet pepper
- Step 3
Melt butter in a pot and after add chopped seasoning until transparent then cook shrimp for 5 mins until it has an orange-pink color. Set aside
- Step 4
Chop up mixed greens finely and tomatoes.
- Step 5
In a bowl mix Sour Cream and a hot sauce of your choice (we choose Carolina reaper)
- Step 6
To a flat skillet add the flour tortilla then add cheese and add Shrimp
- Step 8
Place a corn tostada on top then the Spread the sour cream on the corn tostada , then vegetable mix and tomatoes cheese
- Step 9
Flip to cook on both sides 1 min and a half on each side.Secondly, Cut it in half and serve while hot!
Can you refrigerate quesadillas?
Cooked quesadillas will last for up to three days in the refrigerator when properly stored. Make sure to refrigerate them within two hours of cooking for safety and quality. You can wrap them in foil or plastic wrap or you can place them in a sealing bag or even an airtight container. You just want them to be sealed away so the air doesn’t dry them out unnecessarily.

Easy Jerk Shrimp Quesadilla
Ingredients
- Shrimp
- 2 tbsp of Jerk seasoning
- 1 tbsp of Complete Seasoning
- 1 tbsp of Black Pepper
- 1/2 of yellow onion
- 1 tsp scotch bonnet pepper
- 1 peg of fresh garlic
- 1/4 cup of scallions
- 1/4 cup of butter
- Vegetable of your choice mixed greens or lettuce etc
- 1 to mato
- 1 cup of sour cream
- 3 drops of Carolina Reaper very hot
- Flour Tortilla
- Corn Tostada optional
- Monterey Jack Cheese
- Cheddar Cheese
Instructions
- Wash shrimp in lime and vinegar water to get rid of rawness.
- Rinse and cut the shrimp in half
- Marinate the shrimp:
- Toss the shrimp in a small bowl with jerk seasoning, complete seasoning and black pepper. Let that marinate overnight or at least 30 mins.
- Chop up seasons like garlic, onion, scallions, and Scotch bonnet pepper
- Cook the shrimp:
- Heat butter oil in a relatively stick-free skillet (a cast-iron skillet works well for this) on medium-high heat.
- Add the chopped seasonings and cook until transparent
- Add the shrimp and cook for 5 minuts until orange pinkish in color.
- Sour Cream Dip:
- In a bowl mix sour cream and a hot sauce of your choice!
- Heat the tortillas: Add canola to skillet then Place one flour tortilla on the skillet Sprinkle the tortilla with the grated cheese. Distribute the shrimp on top of the cheese. Place a corn tostada on top then the Spread the sour cream on the corn trostada, then vegetable mix and tomatoes cheese fold in half
- Flip the quesadilla over when the bottom tortilla is nicely toasted and the cheese has begun to melt. Remove the quesadilla from the pan when the now bottom tortilla has toastedgolden brown.
- Cut the quesadilla into triangles:
- * Cut like a pie into six pieces (a pizza wheel works well for this). Place on a serving plate.
