Caribbean Green Seasoning
Caribbean Green Seasoning is the backbone of Caribbean cooking. Before the pot hits the stove, before the grill heats up, and before any bold flavors develop — this is where the magic begins.
At Jerk Tavern, we use green seasoning as our go-to flavor base for everything from stews and soups to roasted vegetables, tofu, chicken, fish, and even grains. It’s fresh, aromatic, herbaceous, and deeply rooted in Jamaican home cooking.
Unlike dry spice blends, green seasoning is alive with fresh herbs, peppers, and aromatics, blended into a vibrant paste that infuses food from the inside out.

What Is Caribbean Green Seasoning?
Caribbean green seasoning is a fresh herb and vegetable blend used to marinate, season, and build flavor in savory dishes. It’s typically blended into a thick paste or loose sauce and used as the first layer of seasoning in Jamaican cooking.
Think of it as:
- A flavor foundation
- A natural marinade
- A fresh alternative to bottled seasonings
Every household makes it a little differently, but the heart of Jamaican green seasoning remains the same: scallion, thyme, garlic, onion, and pepper.
Jamaican Green Seasoning vs Caribbean Green Seasoning
While many Caribbean islands use green seasoning, the Jamaican version has its own identity.
Jamaican Green Seasoning:
- Heavy on scallion (green onion)
- Fresh thyme is essential
- Often includes Scotch bonnet (used moderately)
- We do not use cilantro like the Spanish Caribbean versions
- Brighter and more aromatic than herb-heavy blends
Trinidadian and Puerto Rican versions often rely more on culantro (shadow beni), while Jamaican green seasoning leans into thyme and scallion as its signature flavor notes.

Ingredients in Green Seasoning
- Scallion (Green Onion)- The backbone of Jamaican seasoning. Scallion provides a mild onion flavor with a fresh, grassy bite that defines the blend.
- Fresh Thyme- Non-negotiable. Thyme gives green seasoning its earthy, unmistakably Jamaican aroma.
- Garlic- Adds depth and savoriness. Garlic helps the seasoning penetrate proteins and vegetables.
- Onion- Balances the herbs with natural sweetness and body.
- Scotch Bonnet Pepper- Used sparingly. This adds fruity heat and complexity, not overpowering spice.
- Sweet Bell Pepper- Adds mild sweetness and helps smooth out the heat from the Scotch bonnet.
- Ginger – Adds warmth and brightness, especially good for seafood and plant-based dishes.
- Allspice – (pimento) adds warm, aromatic depth and authentic Jamaican flavor to green seasoning.
- Parsley – gives a clean, mild, slightly peppery flavor that complements the scallion and thyme without overpowering them.
- Lime or Lemon Juice- Acts as a natural preservative and brightens the overall flavor.
- Oil (Optional)- Helps emulsify the blend and makes it easier to use as a marinade.
- Salt- Enhances and balances all the flavors.

Thine, O LORD, is the greatness, and the power, and the glory, and the victory, and the majesty: for all that is in the heaven and the earth is thine; thine is the kingdom, O LORD, and thou art exalted as head above all. 1 Chronicles 29:11 KJV
Wisdom
Our God is greater, our God is stronger, and our God is higher than any other god out there. There is no other god but him. Our Heavenly Father, YHWH, deserves all the glory, all the honor, and all the praise, for everything he has done. He is the creator of all. He created the heavens above, the earth beneath, and the waters under the earth.
The earth is his and everything in it. He created us all, he formed us all in our mother’s wombs. We are all sinners in need of a Savior, we fall short of his glory because we all do wrong. So he sent his only son Jesus to die on the cross so that through Jesus, we could be saved, and partake in his glory. Jesus has defeated death, not only did he die a horrible death, but he came back to life, showing what happens after death.
There is a resurrection and we will all come back to life. The question is will we be with Jesus or will we be with his enemies in hell? Jesus has been exalted as a high priest forever by YHWH, and Jesus is now the judge of us all. When he brings us back to the life he will decide. Praise Him, glorify him, worship at his feet. For Jesus is the way, the truth, and the life. No one can come to YHWH in heaven unless it’s through Him.
