What are Panko breadcrumbs?
Panko is a Japanese type of breadcrumb that is especially light and crunchy, popular because it doesn’t get soggy. The Panko topping held in the salmon’s moisture while frying the fish, so the salmon didn’t get dried out! I love this Panko Crusted Salmon because it requires very little prep time and looks so fancy! The flavors and crust plus the added coconut flakes were a game-changer.
How to cook coconut curry panko-crusted Salmon?
This salmon recipe is definitely going to be added to my rotation! It is deliciously flavorful and so easy to make! Here is how:
Step 1:
The first thing you want to do is take the skin off your salmon if you want it removed. Then soak the salmon for 5 mins in cold lime or lemon water. Rinse and slice. Season the salmon and let it rest for at least 30 minutes or overnight if possible.
Step2
a) Coconut Panko Crust
In a bowl or plate add panko, coconut flakes, and chives or green onion.
b) Flour in another bowl
c) Coconut Curry Batter
To a bowl add coconut milk, curry powder, mayonnaise, black pepper, oregano, onion powder, and ginger(full ingredient list in recipe below⤵️⤵️)
Step 3
Dip salmon in flour then into the coconut curry batter then in the coconut panko crust then onto a baking pan based on butter.
Step 4
Place into a preheated oven of 375 for 15-20 minutes. You’ll know it is done for sure when the fish flakes easily with a fork. This is how you cook panko-crusted salmon.

Ingredients
Ingredients to Season Salmon
- Salmon

- 1 tbsp of black pepper
- 1 tbsp of ground garlic
- 1 tbsp of adobo powder
Panko Crust Ingredients
- 3-4 cups of panko crust
- 1/2 cup of coconut flakes
- 1/4 cup of chives
Coconut Curry Batter
- 1/2 cup of coconut milk
- 1 cup of mayonnaise
- 1 tsp of black pepper
- 1 tsp of onion powder
- 1 tsp of oregano
- 1 tsp of ginger
- 1 tsp of all spice
Instructions
