Many people have never heard of phyllo dough and we were one of them! We accidentally grabbed phyllo dough instead of puff pastry for our pie crust lol!!! Like HELLOO what were we reading haha? But it was an accident gone right and we loved it! Long story short gives this dough a try. It’s also called filo. Phyllo is an unleavened bread that is used for pastries typically. It does not contain dairy as long as you brush the layers with olive oil instead of butter. So if you decide to make a vegan pot pie. You can find phyllo in the refrigerated section at your local supermarket and before you pick it up READ THE LABEL! LOL

What is the sauce made of in Jerk Chicken Pot Pie?
Our pot pie filling is made up of stovetop jerk chicken, mixed vegetables, potatoes, onions, garlic, dry seasonings, chicken broth, and heavy cream. The ideal consistency of your filling should be yummy creamy and thick. Is your filling seems soupy? let it simmer until it thickens up enough to coat the back of a wooden spoon. If it seems like it’s not thickening up then just whisk in some flour until there are no more lumps. If the filling thickened up too much then whisk in a little broth or water to thin it out again.
Does chicken pot pie contain potatoes?
Not all chicken pot pies contain potatoes but ours do. The beauty of pot pie is that you can make your filling with whatever ingredients you want. You can make it vegan or even use seafood.
Use Fresh Or Frozen Vegetables
To make this chicken pot pie super easy, we used a frozen vegetable medley it has corn, carrots, peas, and green beans. Using a frozen veggie mix just makes things a lot simple and helps you skip the hassle of chopping so much. Using frozen vegetables does not take away from the taste.

Ingredients for Chicken Pot Pie

- Frozen vegetables – Allow them to thaw,(carrots, corn, green beans, and green peas)
- Potatoes– Delicious surprise in the filling.
- Jerk Seasoning– To season chicken
- Jerk Chicken Thighs – We make jerk chicken and chop it up, but store-bought rotisserie chicken works too. It should be cut into very small cubes.
- Chicken Broth – Use low-sodium to avoid making this too salty.
- All-purpose flour – Helps to thicken the pot pie filling.
- Heavy Cream – Part of the filling that makes it rich and creamy.
- Butter – Used to sauté the vegetables.
- Seasonings – A simple combination of coarse salt, black pepper, paprika, dried thyme, complete seasoning, and adobo to season this easy chicken pot pie.
- Browning– To give the chicken thighs color.
- Pie crust – You can use any dough of your preference we used phyllo dough.
- Egg Whites – Beaten with water and olive oil to create layers of the phyllo dough. Also, use this to brush the top of your crust to get a nice golden color.
How to Make Chicken Pot Pie
- Cook the chicken: Start by seasoning your chicken thighs and let it marinate overnight. Then just add oil to a skillet and give the chicken a nice sear on both sides. Remove it from the pot and set it aside.


- Make the filling: To the same pot add your butter, then onions, potatoes, and garlic last. It’s time to bring this filling alive add flour, chicken stock, heavy cream, and season.
- As it thickens add your mixed veg and chop your chicken into small cubes and add it in.







- Make the pie crust: If you’re intimidated by pie crusts, then definitely buy the crust as we did this saved time. If you’re going the use the phyllo dough as we did. Use egg whites later(see full recipe below)


- Put it all together: Portion the filling into individual ramekins and top with a lid of pie crust. Bake until the pastry is golden brown and the filling is bubbly. Brush the top with butter and serve!


Different Ways to Make Pot Pie
Want a vegan or vegetarian dish? We got you or maybe you prefer turkey, how about brown stew beef? No worries!
- Use a store-bought rotisserie chicken-Instead of cooking just grab some already cooked rotisserie chicken at your local grocery store this will spread up the process.
- Use Turkey-You can easily turn these into turkey pot pies by swapping the chicken for leftover turkey. The perfect way to use up that leftover Thanksgiving turkey!
- Make it vegan or vegetarian– Swap out the meat for mushrooms or even jerk lentils and double up on the vegetables.
- Add your favorite vegetables . You can use vegetables that you are a fan of. If you don’t like peas and carrots, you can add any type of vegetables you want to your chicken pot pie, like broccoli, and cauliflower also adding potatoes is a game changer!
- Make a normal-sized pot pie. If you prefer to make one big pot pie instead of 4 mini pot pies as we did, then simply just transfer the filling to a 9×9 baking dish and add strips of pie crust across the top.

Ingredients
Season Meat
- Boneless Skinless Chicken Thighs
- 2-3 tbsp Jerk Seasoning depending on how big and how many thighs you have.
- 2 tbsp black pepper
- 2 Cloves Garlic
- 1 tbsp paprika
- 1 tbsp complete seasoning
- 3-5 crushed pimento seeds
- 1 tsp dried thyme
- Scallion
- 1 tso of adobo
- 1 tbsp Browning
Seasonings for Filling
- 1 medium Onion chop in small pieces
- 1 cup * Frozen vegetables carrots, corn, green beans, and green peas
- 3 medium Irish Potatoes chope in small to medium pieces
- 1/2 Cup Chicken Broth
- 1/4 Cup all-purpose flour
- 1/2 Cup Heavy Cream
- 1 tbsp black pepper
- 1 tsp paprika
- 1 tsp dried thyme
- 1 tsp adobo
- 1 tbsp Complete Seasoning
- 1/3 Stick of Butter
- 2 Cloves Garlic
- 1 tbsp Salt
Ingredients for Crust Layers
- Phyllo Dough
- 1 Egg Whites
- 1 Tsp Water
- 1 tbsp Olive Oil
Instructions
- Cook the chicken: Start by washing your chicken in water, like vinegar then rinse and pat the chicken dry.
- * Season your chicken thighs with jerk seasoning, pimento, adobo, black pepper, paprika, complete seasoning, dry time, and let it marinate overnight.
- * Then just add oil to a skillet and give the chicken a nice sear on both sides. Remove it from the pot and set it aside.
- Make the filling: To the same pot add your butter, then onions, potatoes, and garlic last. It’s time to bring this filling alive add flour, chicken stock, and heavy cream, and season with complete seasoning, adobo, black pepper, paprika, salt, and dried thyme.
