Blackened Fish was made up by Chef Paul Prudhomme he decided to take a fish fillet and cover it in a spice blend. Then he cooked it in a very hot cast iron skillet and there created the blackening. Now we use and love this method on not only fish but also chicken.

A dry spice rub does the trick when I’m looking to add fast flavor to proteins. So how do you make a blackening seasoning mix? My blackening spice recipe is a mixture of Dry Jamaican Jerk Seasoning (Homemade), Cumin, Paprika, Complete Seasoning, Adobo, and Black Pepper.

Why is it called blackened seasoning?
The method is called blackening because the point is to appropriately burn (blacken) the spice coating.

Oil is the best sticking agent. Be sure to pat your fish dry then rub the oil on it. We find it best to place the seasonings on a plate and place the fish on top f the seasonings and just pat in the seasoning on both sides.
What oil should I use for blackened fish?
Traditionally, blackened fish is made using a lot of butter, but we use to use canola oil. You can use olive oil also.
Is Cajun seasoning the same as blackened?
What is the difference between Cajun and Blackened Seasoning? Both are seasoning mixes; however, cajun seasoning generally tends to be spicier. Blackened seasoning does have some heat but if you have sensitivity to spice then I would choose the blackened seasoning over the cajun seasoning.
Should you season fish before frying?
Yes, always season your fish before Frying it. Season your fish overnight for the best results, 30 mins the least.
Can you blacken fish without a cast iron skillet?
Yes, yes you can blacken fish without a cast iron skillet. If you don’t have one, you can also use a large nonstick skillet.

Blackening is different from grilling because it does not require an open flame and calls for a specific blend of species and herbs. Blackened food will also have a charred outer layer created by these seasonings, while grilled food will usually be charred in stripes.
Blacked Salmon Ingredients
- Salmon: Fresh (never frozen if possible) wild-caught salmon.
- Oil: Any type of neutral oil or olive oil works well for searing salmon we used canola.
- Spring Onions: garnish before serving.
- Blackening seasoning:
- Homemade Dry Jerk Seasoning ( Cumin, nutmeg, allspice, smoked paprika, cinnamon. Red pepper flakes, cayenne pepper, brown sugar, Salt and pepper)
- Cumin
- Paprika
- Complete Seasoning
- Adobo
- Black Pepper
How to Make Blackened Salmon
- Season salmon: Rub salmon with spices: sprinkle the mixture evenly on both sides of the salmon fillets and spread evenly over to coat the top surface.
- Preheat Pan: Pour oil into a non-stick pan or cast iron skillet and tilt the pan to fully coat with oil. Heat pan over medium heat (monitor the oil while you prep the salmon don’t let it overheat).
- Sear salmon in the skillet on the first side: Place salmon fillets in heated skillet spice rubbed side facing downward. Let sear until blackened on the bottom, about 3 minutes.
- Cook opposite side: Flip salmon to the opposite side and let cook until browned on the bottom and just barely cooked through, about 3 minutes longer (if needed you can reduce burner temperature to medium-low if it’s getting too dark on the exterior before interior cooks through)
Tips for Success
- Be sure to preheat the skillet for a nice sear.
- Don’t move the salmon while it cooks, this is also for better blackening.
- Use a high smoke point oil such as canola oil, olive oil, or vegetable oil so the oil doesn’t burn and impart an off flavor.
- If salmon is browning too quickly before the center is cooking through reduce the burner temperature (as always).

We are all sinners in need of a Savior. As believers in the Highest, we know Jesus is our Lord and Savior. He died for us so we could be forgiven. As we go on in this life trying our best to live for Christ, we may stumble or fall back into sin.
We are constantly warring in the Spirit against our flesh. Our flesh wants to sin, but the Holy Spirit wants Holiness. We will all reap what we sow. If we sow to the flesh we sin and sin leads to death, if we sow to the spirit it leads to holiness, unto everlasting life. When we see our brothers and sisters in Christ sin, we must rebuke them and turn them from the error of their ways.
Not to say that we are better than them, but to save them from death. In turn, we expect the same from them. To correct us when we are wrong and change the error of our ways. Jesus doesn’t wish anyone to perish, but for all to come to repentance. We must repent every day, and rebuke, exhort, and comfort one another.
Open rebuke is better than secret love. We are all in this together, we are brothers and sisters and we need to look out for one another. Saving one another from death and covering a multitude of sins. Simply as Jesus our Lord and Savior said, to love our neighbors the way we love ourselves.
How to make jerk blackened salmon
Ingredients
- Salmon
- * Oil
- * Spring Onions: garnish before serving.
- * 1 tbsp of Paprika
- * 1 tbsp of Cumin
- * 1 tbsp of Complete Seasoning
- * 1 tbsp of Adobo
- * 1 tbsp of Black Pepper
- * 3 tbsp of Dry Jerk Seasoning
Instructions
- Slice then Wash Salmon with lime, vinegar and water to get rid of the rawness. ( take off the skin if your not a fan of it)
- Rinse with water and pat it dry.
- Season salmon: Rub salmon with spices: sprinkle the mixture evenly on both sides of the salmon fillets and spread evenly over to coat the top surface.
- Preheat Pan: Pour oil into a non-stick pan or cast iron skillet and tilt the pan to fully coat with oil. Heat pan over medium heat (monitor the oil while you prep the salmon don’t let it overheat).
