Caribbean Coleslaw
Ingredients
- 4 cups shredded green cabbage
- 1 cup shredded purple cabbage
- 1 cup shredded carrots
- ½ onion finely chopped
Dressing:
- ½ cup mayonnaise add more for more cream
- ½ the juice of a lime or lemon
- 2 tbsp sugar to taste
- 1 tbsp scotch bonnet (or 1 tsp red pepper flakes) finely diced, optional
- ½ tsp salt to taste
- ¼ tsp black pepper to taste
- ½ tsp ground all spice
- ½ tsp ground nutmeg
Instructions
- Use a food processor to dice up cabbage and carrots. Dice up onion.
- Combine cabbage, carrots, onion, and scotch bonnet pepper or pepper flakes in a bowl.
- In another bowl, whisk all dressing ingredients.
- Pour dressing over slaw and toss to coat.
- Chill 30 minutes or longer before serving.

I’m confused. 😬 It says to mix the veggies and lists 3 things that are not on the ingredients to list: red bell pepper, scallions and cilantro. And the recipe never says how much pineapple to add??
